Required for Top 4* Lodge and Camp
Single Live in + 3 meals per day + Cellphone
Relevant hospitality/ tourism qualification
Minimum 3 years’ experience in a 4* or 5* environment in the same or similar role
Banqueting & Restaurant experience
MUST know food costs, menu layout, Buffet + a la Carte presentation, stock procurement
Budgets/ Accounting experience
Ensure Front Office runs smoothly with all Arrival and Groups
Ensure Chefs have all stock items and buffet menu sorted daily.
Ensure Managers / Supervisors are Managing their departments with no issues.
Ensure all Rosters are done timeously, and staff are clocking correctly.
Ensure all stock accounted for from Stores to the Kitchen & Bars onto Micros
Ensure Maintenance is managed, and tasks are completed and checked by yourself.
Ensure Housekeeping is managed, and Laundry is running smoothly.
Check all machinery & equipment to ensure all in working condition.
Ensure the Rangers managed and sales targets achieved, fleet management of Vehicles
Ensure all security checks are done and gates are managed
Oversee/ look after Groups – Mainly International Guests – Americans & Dutch speaking.
